Roasted gazpacho

Super easy, super delicious, super healthy, super summery.
You can adjust the vegetables and quantity depending on what you have, here's what I had:
5 plum tomatoes stemmed and halved lengthwise
3 poblano peppers stemmed and halved lengthwise
1 red pepper seeded stemmed and halved
1 English cucumber seeded and rough chopped
1 red onion rough chopped
2 garlic cloves rough chopped
3 scallions sliced
a big handful of cilantro, parsley and chives chopped
1 big can diced tomatoes with juice
zest and juice of 1 lime
salt, pepper, chili powder and a splash of red wine vinegar

Set oven rack close to the broiler and place tomato and peppers skin side up on your ugliest baking sheet

keep checking every few minutes to make sure everyone is getting charred

let them cool while you prep the rest of veggies

Pulse the onion, garlic and cucumber in a food processor until they are very fine, transfer to a large bowl. Add seasoning lime and vinegar and combine. The skin will peel right off of the roasted vegetables at this point, put them in the processor whole with the can of diced tomatoes. Pulse until they are just small, not as smooth as the others. I kept some of the poblano seeds because we like spicy. Mix all together, chill and top with a dollop of sour cream and some garlic toast...
I wish I had garlic toast.

Souvlaki Sliders

This is a simple, healthy summer dinner. I start with ground chicken, chopped fresh spinach, scallion, herbs and crumbled feta. Mix and form into slider size burgers. Grill or cook on the stovetop until thoroughly done. Make tzatziki sauce: plain Greek yogurt, chopped fresh dill and oregano, olive oil, grated garlic, a cucumber that has been seeded, grated and squeezed dry.

Prepare greens, onion and tomato, warm the pitas and assemble. Easy and delicious!

Yard sweet yard

To say that we love our yard would be an understatement! It really is like having our own little vacation spot May through mid September. We are so fortunate to have the space that we do living in a neighborhood with houses close together and are able to create a few different areas to enjoy. Come along, I'll show you what I mean.

Ahh, The Lounge. In the late afternoon it's a great place for an outdoor nap amidst the lush green plants, a shady tree up above just listening to the birds. After dinner it's a cozy place to enjoy the fire.

Last post you met our kegerator which is on this patio. This is the work area, my outdoor kitchen with a fridge and sink (not pictured)

The deck is the busy spot, it's the center of everything! Pool, dining and lots of potted plants.

And this gorgeous view!

Last but not least is the back, back yard that is still in progress but coming along nicely. It can be overflow for big parties or just nice to sit and look at the birds and perennial gardens.
Thanks for visiting!

Kegerator beer cap backsplash

Since opening my own non-crafty business my creative soul aches for any way to be creative. I've been saving bottle caps for an unknown project, unknown until now... what husband doesn't need his kegerator decorated?

We had some extra fencing that I've also been wanting to use, I just love when an idea just comes together when you least expect it. As you can see, there was not much to this project. I used some tiny nails and secured the caps. Done! Just a simple little project but it made me happy, cheers!

Jammed

I was lucky enough to score 8 quarts of strawberries from my farmer neighbor at the market last week, the only problem was that they wouldn't last another day. No problem! My husband stemmed, bagged, and froze them while I was at work that night (love him!) and I went crazy all week making jams.
So far, I have classic strawberry, strawberry blueberry, vanilla bourbon strawberry, strawberry rhubarb, and the last of the berries will become balsamic strawberry. I also made Cabernet Sauvignon jelly and jalapeño jelly. My kitchen is littered with canning jars. Here are some pics from last week's market

Market prep

It's time for the Upper State Street Farmer's Market again! For me this means I get to force my love (obsession) of all things vintage linen-dish towels- embroidery on the public, whether they want it or not! Opening day is this Saturday and I'm not nearly ready but here's a sample of my obsession:
